Rice Salad Recipe
Ingredients
1/2 cucumber, sliced
2 tbsp (30 ml) oil
1 tbsp (15 ml) wine vinegar
2 cups (500 ml) water, lightly
Salted
1 cup (250 ml) rice
4 oz (125 g) cream cheese
2 tbsp (30 ml) mayonnaise
1/4 onion, finely chopped
8 stuffed olives, finely sliced
1/2 cup (125 ml) green bell pepper or sweet red pepper, diced
Parsley
1 celery stalk, diced
Salt and pepper
Directions
– In a bowl, combine cucumber, oil, and vinegar. Marinate.
– Meanwhile, pour lightly salted water in a saucepan, bring to a boil, and add rice. Put the cooked rice in a salad bowl, and let stand to cool.
– In a separate bowl, combine mayonnaise and cream cheese. Fold into cooled rice. Add other ingredients. Toss.
