Mayonnaise Rice Ring Recipe
Ingredients
| 5 cups cooked long- grain white rice | ||
| Frozen green peas | 1 Cup (16 tbs), thawed | |
| 1/4 cup chopped green onions, with tops | ||
| Dry roasted peanuts | 1/4 Cup (16 tbs), chopped | |
| Sweet red pepper | 1/4 Cup (16 tbs), diced | |
| 1/4 cup diced sweet yellow pepper | ||
| 1/3 cup reduced-calorie mayonnaise | ||
| 1/2 teaspoon each salt and black pepper | ||
| Nonstick cooking spray | ||
| 1 large bunch watercress, large stems removed | ||
Directions
1. In a large bowl, toss the rice, peas, onions, peanuts, and the red and yellow peppers. In a Cup, blend the mayonnaise with the salt and black pepper, then stir into the rice mixture.
2. Coat an 8-cup ring mold with the cooking spray. Spoon the rice mixture into the mold, pressing it down. Refrigerate for at least 2 hours. Invert onto a platter, fill with the watercress, and decorate with vegetable flowers.
