Rice Pilau Recipe
Ingredients
| 2 tablespoons unsalted butter or margarine | ||
| 1 medium-size onion, chopped (1 cup) | ||
| 1 cup uncooked long- grain white or brown rice | ||
| 1/2 teaspoon each ground allspice, cinnamon, salt, and black pepper | ||
| 1/4 teaspoon each ground mace and cloves | ||
| 2 1/2 cups Chicken Stock or low- sodium chicken broth | ||
| Dried apricots | 1 Cup (16 tbs), chopped | |
| Golden Raisins | 1/2 Cup (16 tbs) | |
| Slivered almonds | 1/2 Cup (16 tbs), toasted | |
Directions
1. In a large saucepan, melt 1 tablespoon of the butter over moderately high heat. Stir in the onion and rice and saute for 5 minutes or until the onion is browned, then add the seasonings and stock. Lower the heat, cover tightly, and simmer for 20 minutes or until the stock is absorbed.
2. Meanwhile, in a small skillet, melt the remaining 1 tablespoon of butter. Add the apricots, raisins, and almonds and saute for 5 minutes or until sizzling. Toss with the rice. Serve with Hillary's Chicken.
