Rice Pilaf Recipe

Ingredients
6 tablespoons olive oil
1/4 cup finely chopped onion
2 cups uncooked long grain rice
4 cups well-seasoned chicken broth
1 1/2 teaspoons salt
1/2 cup shredded Cheddar cheese or pasteurized process cheese
Directions
1. Heat oil in a large heavy skillet having a heat-resistant handle. Add onion and rice; cook over low heat 3 minutes, or until rice is golden.
2. Add chicken broth and salt; cover tightly.
3. Bake at 375°F 35 to 40 minutes. Remove from oven; fluff rice with a fork and stir in cheese.
