Simple Rice Pilaf With Chicken Recipe

Ingredients
2 Tbsp. butter
2 cup finely diced onions
1/4 cup minced parsley
3/4 cup diced celery
1 cup long-grain ripe
1/2 tsp. salt
1 (14 oz) can chicken broth (orbouillon crystals and water)
3/4 cup water
1 (4 oz) can sliced mushrooms
Directions
In 2 qt glass casserole blend butter, onion, parsley and celery.
Microwave (high) 3-4 minutes stirring once.
Combine with rice, salt, chicken broth, water and undrained mushrooms.
Microwave (high), covered, 10-12 minutes, rotating dish 1/4 turn halfway through cooking.
Rest, covered, 5-10 minutes before lifting lid.
If rice isn't tender, recover and cook 1-3 minutes longer
Microwave (high) 3-4 minutes stirring once.
