Ingredients
1/4 cup (1/8 lb.) butter or margarine (or half butter and half salad oil)
2 cups uncooked long-grain rice
1 can (10 3/4 oz.) condensed consomme
1 soup can water
1 can (8 oz.) sliced mushrooms (including liquid)
1 tablespoon chopped parsley
2 teaspoons salt
Dash of thyme and/or marjoram
Directions
Melt butter in a large, heavy frying pan or a Dutch oven which has a lid.
Add rice and saute, stirring constantly, until golden brown.
Stir in remaining ingredients and bring to a boil.
Then, cover tightly and cook over very low heat for about 30 minutes, or until rice is tender, and all liquid has been absorbed.
