Ingredients

 Red onion1 , chopped
 1 bud garlic, minced
 Green pepper1 , chopped
 2 tablespoons butter, margarine or drippings
 Canned tomatoes1 Cup (16 tbs)
 2 cups beef broth or cube or canned consomme
 Chili powder1 Teaspoon
 Salt2 Teaspoon
 Rice1 Cup (16 tbs), uncooked

Directions

1. Saute the onion, garlic and green pepper in the fat 5 minutes.
2. Add the tomatoes, broth or consomme, chili powder and salt. Mix and stir in the rice; cover and simmer 30 minutes.
3. Remove the lid and let the mixture dry out over very low heat.
