Rice Mexican Recipe
Ingredients
| Red onion | 1 , chopped | |

| Green pepper | 1 , chopped | |
| 2 tablespoons butter, margarine or drippings | ||
| Canned tomatoes | 1 Cup (16 tbs) | |
| 2 cups beef broth or cube or canned consomme | ||
| Chili powder | 1 Teaspoon | |
| Salt | 2 Teaspoon | |
| Rice | 1 Cup (16 tbs), uncooked | |
Directions
1. Saute the onion, garlic and green pepper in the fat 5 minutes.
2. Add the tomatoes, broth or consomme, chili powder and salt. Mix and stir in the rice; cover and simmer 30 minutes.
3. Remove the lid and let the mixture dry out over very low heat.
