Directions
1. Set a deep fat kettle on a warm, not hot, part of the range and fill it half full of fat. Let it slowly heat to 360° or 365° F., or hot enough to brown a 1-inch cube of bread in 50 to 60 seconds.
2. Add the eggs, sugar, vanilla and lemon peel to the rice and mix thoroughly.
3. Sift the baking powder, flour and salt together and stir into the rice mixture.
4. Drop the batter from a spoon into the hot fat. Fry until delicately brown. Drain on soft paper towels.
