Rice Fritters Recipe
Ingredients
2 cup brown rice, cooked
3 eggs beaten
1/2 tsp vanilla extract
1/2 tsp fresh lemon peel, finely grated
1/3 cup all-purpose flour
1/3 cup granulated sugar replacement
1 tsp baking powder
1/2 tsp salt
Directions
With a wooden spoon, beat together rice, eggs, vanilla and lemon peel until thoroughly blended.
Sift together the flour, sugar replacement, baking powder and salt.
Stir thoroughly into the rice mixture.
Drop by spoonfuls into deep fat heated to 365°F (180°C).
Fry until golden brown, turning if necessary.
