Rice Au Gratin Liege Style Recipe

Ingredients
For the rice:
4 cups milk
1 cup rice
1/4 teaspoon salt
3/4 cup sugar
1 teaspoon vanilla
For the applesauce:
1 1/2 pounds cooking apples
1/2 cup sugar
1/2 cup raisins, soaked in hot water until plump and drained
1 teaspoon cinnamon
3 tablespoons water
1/2 cup freshly made breadcrumbs
2 tablespoons butter
Directions
Place the milk, rice, salt and sugar in a saucepan and bring to a boil, stirring constantly.
Lower the heat, cover the pan and simmer slowly for 25 minutes or until rice is tender and the mixture resembles thick soup.
Meanwhile, peel, core and chop the apples.
Place them in a heavy pan with the sugar, raisins, cinnamon and water.
Cook over very low heat until the apples are soft.
Force the mixture through a sieve to form applesauce.
When the rice is tender, stir in the vanilla and place half of the rice in a lightly buttered casserole.
Cover with the applesauce and then the remaining rice.
Sprinkle the rice with breadcrumbs and dot with butter.
Place the casserole under a preheated broiler for a few minutes until the breadcrumbs are golden brown.
