Chicken Rice And Peas Recipe
Ingredients
| Bacon Slices | 2 | |
| 2 tablespoons sliced green onion | ||
| Chicken broth | 1 1/2 Cup (16 tbs) | |
| 1 cup shelled fresh peas or 1/2 of a 10-ounce package frozen peas | ||
| 1/2 cup short, medium, or long grain rice | ||
| Snipped parsley | 2 Tablespoon | |
| Salt | 1/4 Teaspoon | |
| Pepper | 1 Dash | |
Directions
In saucepan cook bacon till crisp.
Drain, reserving 1 tablespoon drippings.
Crumble bacon and set aside.
Cook green onion in reserved drippings till tender but not brown.
Stir in broth, fresh or frozen peas, rice, parsley, salt, pepper, and crumbled bacon.
Bring to boiling, stirring occasionally.
Reduce heat.
Cover and simmer for 15 minutes.
Remove from heat.
Let stand, covered, for 5 to 8 minutes or just till rice is tender.
