Rice And Black Eyed Pea Salad Recipe
Ingredients
| 1 quart hot boiled rice | ||
| Black-eyed peas package | 1 , cooked, drained | |
| 1 medium-size yellow onion, peeled and minced | ||
| Garlic | 1 Clove (5gm), crushed | |
| 1 large carrot, peeled and coarsely grated | ||
| Parsley | 1/4 Cup (16 tbs), minced | |
| Salt | 1 1/2 Teaspoon | |
| 1/8 teaspoon black or cayenne pepper | ||
| Olive oil | 3 4 Tablespoon | |
Directions
Mix all ingredients together, adding just enough oil to coat all lightly.
Serve warm or at room temperature as a main dish salad.
Good mounded in hollowed-out tomatoes.
