Ingredients

 1 quart hot boiled rice
 Black-eyed peas package1 , cooked, drained
 1 medium-size yellow onion, peeled and minced
 Garlic1 Clove (5gm), crushed
 1 large carrot, peeled and coarsely grated
 Parsley1/4 Cup (16 tbs), minced
 Salt1 1/2 Teaspoon
 1/8 teaspoon black or cayenne pepper
 Olive oil3 4 Tablespoon

Directions

Mix all ingredients together, adding just enough oil to coat all lightly.
Serve warm or at room temperature as a main dish salad.
Good mounded in hollowed-out tomatoes.
