Ingredients

 3 tablespoons sweet butter
 Onion1 , chopped
 Garlic1 Clove (5gm), crushed
 3 or 4 leaves of green lettuce, shredded
 Pork sausages2 , sliced
 Mushrooms3 , sliced
 3 tomatoes, peeled, seeded and diced
 Raw rice1 Cup (16 tbs)
 Water or chicken broth2 Cup (16 tbs)
 Salt1 Teaspoon
 Ground black pepper1 Dash
 1/2 cup cooked peas
 Pimento1 , diced
 2 tablespoons raisins, sauteed in butter

Directions

1. Melt two tablespoons of the butter in a large saucepan and brown the onion in it. Add the garlic, lettuce, sausages, mushrooms and tomatoes. Add the rice and mix well together.
2. Add the boiling water, salt and pepper. Cover tightly and cook over low heat twenty minutes. Mix well with a fork and add the remaining ingredients. Serve with lamb or poultry, or use for stuffing poultry or veal.
