Rhubarb Meringue Pie Recipe
Ingredients
1 cup sugar 250 mL
2 tbs flour 30 mL
1/2 tsp salt 2 mL
2 egg yolks, slightly beaten
2 1/2 cups rhubarb 625 mL
2 tbs butter 30 mL
Unbaked pie shell
Directions
Mix and sift sugar, flour and salt.
Combine with egg yolks.
Add rhubarb which has been cut fine.
Turn into unbaked pie shell and dot with butter.
Bake for 10 minutes at 425F (220C).
Reduce heat and bake 30 minutes longer at 350F (180C).
Cover with meringue and brown at 325F (160C).
