Rhubarb Crumble Recipe

1 cup flour
 
3/4 cup rolled oats
 
1 cup packed brown sugar
 
1 teaspoon salt
 
1 teaspoon cinnamon
 
1/2 cup melted butter
 
4 cups chopped rhubarb
 
1 cup sugar
 
1 tablespoon vanilla extract
 
1 tablespoon cornstarch
 
1 cup water

Directions

Combine the flour, oats, brown sugar, salt, cinnamon and melted butter in a bowl and mix well.
Press half the flour mixture into an 8x8 inch baking pan.
Spread the rhubarb evenly over the base.
Combine the sugar, vanilla, cornstarch and water in a microwave-safe bowl.
Microwave, loosely covered, on high until thickened, stirring occasionally.
Pour evenly over the fruit layer.
Sprinkle with the remaining flour mixture.
Bake at 350 degrees for 1 hour.
Serve with ice cream or whipped cream.
