Rhubarb Upside Down Cake Recipe
Ingredients
| Rhubarb | 5 Cup (16 tbs), diced | |
| Sugar | 1 Cup (16 tbs) | |
| One 3 oz. pkg. strawberry jello | ||
| Miniature marshmallows | 3 Cup (16 tbs) | |
| White cake mix | 1 | |
Directions
1. Grease a 9" x 12" pan and place rhubarb in the bottom.
2. Place marshmallows over rhubarb.
3. Sprinkle sugar over marshmallows.
4. Sprinkle jello powder on sugar.
5. Mix cake as per package instructions.
6. Pour over rhubarb mixture in pan.
7. Bake at 350° for 1 hour. Cool 15 min.
8. Turn out on foil covered pastry board.

Rhubarb is great for a spring/summer menu. Serve a fresh, light spring salad as first Course, the a grilled or roasted chicken or steak with grilled asparagus, white beans or Spring sides and this Rhubarb upside down cake as dessert.
