Rhubarb Pillows Recipe

Ingredients
1 1/4 pounds rhubarb
1 cup granulated sugar
12 slices almond paste
Batter:
2 1/2 cups flour
10 ounces butter
1 tablespoon sugar
1 egg
For Brushing:
1 egg
Directions
1. Cut rhubarb in 1-inch pieces. Place in a pot, add sugar. Cover and simmer for 10-15 minutes. Remove from heat and let cool.
2. Mix flour, butter, sugar, and egg. Knead thoroughly. Place in refrigerator for 1 hour.
3. Roll the dough out into 12 thin squares. Place almond paste and a tablespoon of rhubarb on each square and press sides firmly together.
4. Brush with egg and bake in 400°F oven for 15 minutes.
