Rhubarb Mousse Recipe

Ingredients

 
2 cups rhubarb,cubed
 
1/4 cup sugar
 
2 envelopes unflavored gelatin
 
1/4 cup cold water
 
1/4 cup boiling water
 
3 cups vanilla ice cream
 
1 tsp lemon peel
 
1/2 tsp nutmeg

Directions

In a saucepan, cook rhubarb and sugar 10 minutes.
In a bowl, dissolve gelatin in cold water.
Add boiling water.
Mix until gelatin dissolves completely.
Fold in sweetened rhubarb.
Let cool slightly.
Mix in remaining ingredients.
Refrigerate 1 hour.
Garnish with whipped cream and julienned rhubarb, if desired.
