Rhode Island Johnnycakes Recipe
Rhode island jhonny cakes are cornmeal cakes prepared with a simple batter. Seasoned and griddle cooked/baked on the stove, the rhode island jhonny cake is quick and easy and great as a side for meals.
Ingredients
1 cup stone ground white corn meal
1 teaspoon sugar
1 teaspoon salt
1 1/4 cups boiling water
Directions
Combine corn meal, salt, and sugar.
Stir in water until mixture is smooth (batter will be very thick).
Drop by tablespoons onto a well greased griddle and fry over moderate heat for 6 minutes.
Turn and cook the second side for 5 minutes.
