 8 slices pumpernickel or other dark bread
 Corned beef1/2 Pound, thinly sliced
 Sauerkraut3/4 Cup (16 tbs), drained
 Thousand island dressing2 Tablespoon
 Swiss Cheese slice4

Directions

Toast bread and arrange 4 slices on paper towels, napkins or small paper plates.
Top each slice with corned beef, then drained sauerkraut, salad dressing and cheese.
Top with other slices of toasted bread.
Cook uncovered, 3 to 3 1/2 minutes or until cheese is melted in center.
