Ingredients
3 tablespoons wine vinegar
1 to 2 tablespoons prepared mustard (preferably Dijon or Dusseldorf mustard)
2 tablespoons minced scallions
2 tablespoons minced celery
1 teaspoon fresh horseradish
1 tablespoon minced parsley
1/2 cup plus 1 tablespoon olive oil
Dash of red pepper
Salt and freshly ground black pepper
Directions
Combine the vinegar with the mustard, scallions, celery, horseradish and parsley.
Beat in the olive oil, a little at a time, and season to taste with red pepper, salt and black pepper.
