Refrigerator Micro-Bran Muffins Recipe

These microwaved bran muffins super easy to prepare. Textured with dates or currants and bound with molasses, these microwaved muffins can be quickly whipped up as a yummy evening snack. The dark brown sugar gives it an extra rich taste that I simply cant get enough of. A quick and easy muffin recipe that is a total hit with my family!

Ingredients

 1 1/2 cups Bran flakes 375 mL
 11/2 cups cooking bran 375 mL
 Boiling water1/2 Cup (16 tbs)
 2 eggs, slightly beaten
 Molasses1/4 Cup (16 tbs)
 1 3/4 cups buttermilk or sour milk 425 mL
 Oil1/4 Cup (16 tbs)
 Sauce2 Teaspoon
 5 to 10 mL(such as Crosse and Blackwell)
 1 cup raisins or dates or currants or prunes 250 mL
 Baking soda2 1/2 Teaspoon
 Ltsp baking powder 5mL
 Salt1/4 Teaspoon
 1/2 cup firmly packed darkbrown sugar 125 mL
 2 cups whole-wheat flour 500 mL

Directions

Microwave muffin pan, paper-lined .
In a large bowl, combine Bran flakes and cooking bran.
Add boiling water and stir to moisten evenly.
Set aside to cool.
Then add molasses, buttermilk, oil, browning sauce and dried fruit; blend together well.
In another bowl combine baking soda, baking powder, salt, sugar and flour.
Add to bran mixture and stir just until moist.
Spoon batter into prepared muffin pan, filling cups two-thirds full.
Bake on a rack for 2 1/2 to 3 minutes on High, rotating pan once during cooking time before removing muffins from pan.
HINT: For a special treat to keep kids happy while you're busy microbaking, take simple chocolate or vanilla wafers and place a marshmallow on top of each.
Microwave for 15 seconds.
The marshmallows will fluff up to a fantastic size and the kids love it.
