Refrigerator Corn Relish Recipe
Ingredients
| White distilled vinegar | 1 1/4 Cup (16 tbs) | |
| Sugar | 3/4 Cup (16 tbs) | |
| Salt | 2 1/2 Teaspoon | |
| Celery seeds | 1 1/4 Teaspoon | |
| Mustard seeds | 3/4 Teaspoon | |
| 1/2 teaspoon liquid hot pepper seasoning | ||
| 8 cups cooked corn kernels | ||
| 1 small green bell pepper, seeded and chopped | ||
| 1 jar (4 oz.) diced pimentos, drained | ||
| 3 green onions (including tops), chopped | ||
Directions
In a 3-quart pan, combine vinegar, sugar, salt, celery seeds, mustard seeds, and hot pepper seasoning.
Bring to a simmer over medium heat.
Simmer, uncovered, for 5 minutes; then remove from heat and let cool.
Stir in corn, bell pepper, pimentos, and green onions.
Ladle into 1-pint jars and screw on lids.
Refrigerate for up to 1 month.
