Refried Chinese Chicken Recipe
Ingredients
| Vegetable oil | 2 Tablespoon | |
| 1 1/2 to 2 cups leftover cooked rice | ||
| 1 large egg, lightly beaten | ||
| 1/2 cup frozen mixed vegetables or "petite" peas, thawed | ||
| 1 1/2 to 2 cups leftover Chinese chicken | ||
| 2 tablespoons chopped fresh parsley, mint, or cilantro leaves (optional) | ||
| Ground black pepper | 1 To taste | |

Directions
1. Heat the oil in a large skillet over medium-high heat until very hot. Add the rice and stir continuously until it is coated with the oil, 1 minute. Make a well in the center of the rice and add the egg. Immediately stir the egg and continue stirring until it is almost scrambled. Then, stirring, incorporate the egg into the rice.
2. Add the mixed vegetables and leftover chicken and cook, stirring continuously, until all the ingredients are hot, 1 minute. Add the parsley, remove the skillet from the heat, and season to taste with salt and pepper.
