Refried Beans Recipe
My passion for refried beans grew during high school days. Use the freshest of beans available to get a delicious refried beans. This refried beans makes a good side dish for most meals. Trust me! I am saying that you must try this refried beans.
Ingredients
1 recipe Beans and Rice, without the rice
1 tablespoon olive oil
OPTIONAL INGREDIENT
2-3 tablespoons sour cream
1 fresh or canned tomato, coarsely chopped
1 red bell pepper, diced
2 tablespoons chopped fresh cilantro
Hot sauce, to taste
Directions
1. Follow Beans and Rice recipe, step 1, using 1 tablespoon oil.
2. Reduce the heat to low and add the beans, 1/2 cup at a time, each time mashing them with the back of a wooden spoon. In between the beans, add water or stock, slowly, stirring often until the liquid is absorbed. Also add the spices and vinegar.
3. Continue adding and mashing the beans, until the beans have formed a thick paste. Add salt and pepper to taste.
