Refreshing Cucumber and Yogurt Salad Recipe
Ingredients
| Cucumbers - 4, peeled or unpeeled, sliced | ||
| Plain or low-fat yogurt - 2 cups | ||
| Mint | 4 Tablespoon, chopped | |
| Salt | To Taste | |
| Ground pepper | 1 To taste | |
| Mint leaves | ||
Directions
MAKING
1) Stack the slices of cucumber and cut down each stack twice. Divide the slices into four quarters.
2) Toss the cucumber with the yogurt.
3) Add the mint, if using, and season with salt and pepper to taste.
SERVING
4) Transfer the salad to a serving bowl, garnish with mint leaves and serve while still fresh and crunchy. Makes a good appetizer as well as side dish.
