Red Currant Cobbler Recipe
Ingredients
| Granulated Sugar | 3/4 Cup (16 tbs) | |
| Firmly packed light brown sugar | 3/4 Cup (16 tbs) | |
| Butter/Margarine | 1/4 Cup (16 tbs) | |
| 1 quart red currants, washed and stemmed | ||
| All purpose flour | 1 Cup (16 tbs) | |
| Baking powder | 2 Teaspoon | |
| Egg | 1 | |
| 2/3 cup light cream or milk | ||
Directions
Combine granulated sugar, brown sugar, butter, and red currants.
Put in greased 2-quart baking dish.
Sift together flour and baking powder.
Beat in egg and cream.
Sprinkle over currant mixture.
Bake in preheated hot oven (400°F.) for about 35 minutes, or until top is crisp.
Serve warm, with heavy cream if desired.
