Ingredients

1 Frys Skirt Steaks (1 ½ pounds)

Salt and Pepper grinder, to taste

1 Tablespoon olive oil

3 tablespoons dry red wine

1 tablespoon crumbled blue cheese

Directions

1. Heat a non stick skillet over medium high heat for two minutes. In the mean time, season the skirt steaks with the salt and pepper grinder to taste. Add the oil to the pan and blacken both sides of the beef for 2 minutes per side. Add the wine and blue cheese and swirl steaks in the pan to coat well. Remove the steaks to a cutting board and let rest for 8-10 minutes. Slice thin against the grain of the meat.
2. Combine all of the salad ingredients into a large bowl and toss well to coat. Place the salad on the serving plates and top with the sliced skirt steaks. Serve immediately

Editors Review

Meats particularly steaks are fulfilling when served with salads or greens. Check out Mike Monahan cooking skirt steaks in olive oil with a couple of seasonings and serving it over Blue Cheese Salad. Great way to have steaks!
