Ingredients
1 pound red snapper fillets
2 medium carrots, thinly sliced (about 1 cup)
1 large onion, chopped (about 1 cup)
1 medium stalk celery, thinly sliced (about 1/2 cup)
1 large clove garlic, finely chopped
1 tablespoon instant chicken bouillon
1/2 teaspoon dried rosemary leaves
2 tablespoons margarine or butter
1 cup water
1/2 cup dry white wine
1/2 teaspoon salt
1/8 teaspoon pepper
2 tablespoons cornstarch
2 tablespoons cold water
Directions
If fish fillets are large, cut into 5 serving pieces.
Cook and stir carrots, onion, celery, garlic, chicken bouillon and rosemary in margarine in 10-inch skillet over medium heatjust until carrots are crisp-tender, about 10 minutes.
Place fish on vegetables.
Pour 1 cup water and the wine over fish; sprinkle with salt and pepper.
Heat to boiling; reduce heat.
Cover and simmer until fish flakes easily with fork, 8 to 10 minutes.
Remove fish with slotted spoon; keep warm.
Mix cornstarch and 2 tablespoons water; stir into vegetable mixture.
