Red Snapper With Mushroom Sauce Recipe

Ingredients

 
1/2 pound mushroomsi sliced
 
1 onion, chopped
 
2 tablespoons minced green pepper
 
1 tablespoon minced parsley
 
4 tablespoons butter
 
4 tablespoons flour
 
1 1/2 cups milk
 
1/2 cup dry white wine
 
1 3/4 teaspoons salt
 
1/4 teaspoon black pepper
 
2 tablespoons lemon juice
 
1 1/2 pounds red snapper fillets, steamed
 
1/4 teaspoon saffron
 
2 cups packaged pre-cooked rice
 
2 cups boiling water

Directions

Saute mushrooms, onion, green pepper, and parsley in butter until tender; blend in flour stir in milk and wine gradually.
Cook, stirring, until thickened; add 1 teaspoon salt, pepper, lemon juice, and fish.
Reheat; add saffron, rice, and 3/4 teaspoon salt to water in saucepan.
Stir with fork cover.
Let stand for 5 minutes.
Fluff with a fork; serve fish, in sauce over rice
