Red Snapper Pudding Recipe

| Butter | 1⁄2 Cup (8 tbs) | |
| Cracker crumbs | 1⁄2 Cup (8 tbs) | |
| Chopped parsley | 1 Tablespoon | |
| Scrapped onion | 1 Tablespoon | |
| Lemon juice | 1 Tablespoon | |
| Salt | To Taste | |
| Pepper | To Taste |

Directions
Add eggs; beat well.
Add milk and half the butter, cracker crumbs, parsley, onion, lemon juice, salt and pepper.
Place in greased baking dish; top with cracker crumbs and remaining butter.
Add additional milk if mixture is dry.
Set baking dish in pan of hot water.
Bake in 300-degree oven for 40 minutes.
Serve with tartar sauce.
