| 1/2 to 1 pound red snapper fillets | ||
| Olive oil | 1 Teaspoon | |
| 8 to 10 tomatillos, husked, well rinsed, and quartered | ||
| 1 medium onion, sliced into thin wheels | ||
| 1 orange, juiced plus thin slices of peel | ||
| 1 to 3 tablespoons green salsa | ||
| 2 tablespoons hulled pumpkin seeds | ||
Directions
Rinse snapper, pat dry.
In a heavy frying pan, heat oil over medium high heat.
Toss in tomatillos, onion, and 2 to 3 slices orange peel.
Cover pan and reduce heat to medium low.
Cook until vegetables are soft, about 10 minutes.
Add orange juice and salsa; stir, then slide in snapper.
Cover and poach snapper in simmering sauce until opaque and flaky, about 12 minutes.
