Red Salmon And Conchiglie Salad Recipe

Ingredients

 
225 g/8 oz conchiglie (use any other pasta incase of non-availability)
 
185 g/6 1/2 oz/1 small can of red salmon, drained
 
50 g/2 oz button mushrooms, sliced
 
5 cm/2 in piece of cucumber, diced
 
8 cherry tomatoes, halved
 
DRESSING:
 
45 ml/3 tbsp olive oil
 
Finely grated rind and juice of 1 lime
 
5 ml/1 tsp caster sugar
 
5 ml/1 tsp dried dill
 
20 ml/4 tsp single cream
 
TO SERVE:
 
Watercress
 
15 ml/1 tbsp snipped chives

Directions

Cook the pasta according to the packet directions.
Drain, rinse with cold water and drain again.
Turn into a bowl.
Remove the skin and any bones from the salmon.
Break into chunky pieces and add to the pasta.
Add the remaining ingredients and toss very gently.
Whisk the dressing ingredients together and pour over the salad.
Toss gently.
Fill salad bowls with some watercress.
Pile the salad on top and serve, sprinkled with snipped chives.
