Red Pepper Sauce Recipe
Ingredients
3 cups chopped red bell peppers
1 tablespoon low-sodium tomato puree or tomato paste
1 tablespoon chopped onion
1 clove garlic, minced
1 teaspoon dried basil leaves
1/2 cup nonfat chicken broth
Directions
Place red peppers, onion, and garlic in a microwave-safe bowl.
Cover with vented plastic wrap.
Microwave on high for 4 minutes or until peppers are tender.
Add chicken broth, tomato puree, and basil leaves.
Microwave with cover on high for 2 minutes.
Transfer to a food processor or blender and puree.
