Red Pepper-Potato Salad Recipe
Ingredients
1 1/2 pounds potatoes, cooked and diced
1 small onion, chopped
1 large red bell pepper, seeded and diced
1/4 cup nonfat mayonnaise
1/2 cup plain nonfat yogurt
2 teaspoons paprika
1/2 teaspoon caraway seeds
1/2 cup chopped fresh parsley
Directions
1. Combine the potatoes, onion, and red pepper.
2. Combine the mayonnaise, yogurt, paprika, and caraway seeds.
3. Toss the potato mixture with the dressing. Garnish with chopped parsley.
