Red-Cooked Pork Tripe Recipe

Ingredients
| Pork tripe | 1 pound | |
| 1 tablespoon salt for cleaning tripe | ||
| Hot water | 1 Cup (16 tbs) | |
| Sherry | 1 Tablespoon | |
| Soy sauce | 2 Tablespoon | |
| Salt | 1/2 Teaspoon | |
| Sugar | 1 Teaspoon | |
| Onion | 1 , cut in half | |
| Ginger slice | 2 | |
Directions
Wash the tripe and place in a bowl of cold water with 1 tablespoon salt; let soak for 2 hours.
Remove from the water and rinse carefully.
Discard the salted water.
Place the tripe in a saucepan, fill with fresh water and bring to a boil.
Remove and discard the water.
Cut the tripe into slices 2 inches by 1/2 inch and place in a pan.
Add the hot water, sherry, soy sauce, salt, sugar, onion and ginger.
Bring to a boil, cover the saucepan, turn down the heat and simmer for 2 hours.
Serve very hot in a shallow bowl.
