Ingredients
| Chestnuts | 1 Pound, dried | |
| Chicken | 5 Pound | |
| Oil | 1/4 Cup (16 tbs) | |
| Water | 2 1/2 Cup (16 tbs) | |
| Soy sauce | 1/3 Cup (16 tbs) | |
| Sherry | 2 Tablespoon | |
| Ginger | 1 Ounce | |
| Scallion | 1 | |
| Brown sugar | 1 Teaspoon |
Directions
Cook the chestnuts in 2 pints boiling water for about 2 hours.
Remove the brown skins and leave the nuts in the water.
Meanwhile cut the chicken into neat small pieces.
Fry them in hot oil for about 5 minutes, or until lightly browned all over.
Add the remaining ingredients with the exception of the brown sugar and cover the pan tightly.
Simmer for 30 minutes.
Add the chestnuts and half the liquid with the brown sugar.
Bring to the boil, cover and simmer for 10 minutes.
