Red Cabbage Recipe
Ingredients
| 1 medium head red cabbage | ||
| Salt | 2 Tablespoon | |
| Butter/Margarine | 2 Tablespoon | |
| Cider vinegar | 1/2 Cup (16 tbs) | |
| Sugar | 1/2 Cup (16 tbs) | |
| 2 tart red cooking apples | ||
| Flour | 1 Tablespoon | |
Directions
Remove outer leaves from cabbage, and discard.
Cut cabbage into quarters; cut out core.
Shred cabbage.
Measure 10 cups.
In large skillet, combine cabbage, salt, butter, vinegar, sugar, and 1/2 cup cold water.
Cook, covered, stirring occasionally, over medi- um heat 15 minutes.
Meanwhile, core the apples, but do not pare; slice thinly; add to cabbage.
Cook 10 minutes, or until cabbage is tender but still crisp.
Sprinkle flour over cabbage mixture; mix gently.
Cook, stirring, until mixture thickens.
Makes 6 servings.
