Red'Wine Stew Recipe

Ingredients

 
3 to 4 slices bacon, cubed
 
2 pounds lean beef and pork, cut into
 
1 inch cubes (or use all beef)
 
1 whole onion
 
4 whole cloves
 
3 onions, chopped
 
1 bay leaf
 
2 carrots, sliced
 
1 1/2 teaspoons salt
 
1 1/2 cups dry red wine
 
2 hot dogs
 
1 cup green beans, peas, or chopped green pepper
 
2 tomatoes, quartered
 
Fresh parsley leaves
 
Flour water paste, optional

Directions

Brown bacon in a large skillet; add beef and pork cubes and brown well on all sides.
Place meat in slow cooker along with a whole onion studded with the cloves, chopped onions, bay leaf, carrots, and salt.
Pour accumulated fat from skillet and add some of the red wine.
Stir to pick up the browried bits.
Add to slow cooker along with remaining wine.
Cover and cook on low about 8 hours.
Add hot dogs the last 1/2 hour and the green vegetable and tomatoes the last 10 minutes of cooking.
Before serving, remove whole onion and cloves.
Garnish with parsley.
Gravy may be thickened in a saucepan with a flour water paste if desired.
