 Dried serrano/Thai chiles7 , finely chopped
 Lemongrass stalk1 , thinly sliced
 Minced garlic2 Tablespoon
 Minced onion1⁄4 Cup (4 tbs)
 Minced coriander root1 Tablespoon
 Galangal slices2 , minced (Fresh)
 Kaffir lime peel strips3 , soaked, drained, and minced
 Salt1 Teaspoon
 Shrimp paste1 Teaspoon
 Ground coriander2 Teaspoon
 Ground caraway/Ground cumin1⁄2 Teaspoon

Directions

Combine ingredients in a mortar or blender and pound or blend to a paste.
Cover and refrigerate until ready to use.
