Red Spanish Gazpacho Recipe

Red Spanish Gazpacho has a fine taste. Red Spanish Gazpacho gets its taste from vegetables juice mixed with bread crumbs and flavored with vinegar. Red Spanish Gazpacho is inspired by many chefs all over the world.

Ingredients

 
1 medium-sized sweet onion, coarsely chopped
 
2 medium-sized cucumbers, peeled and coarsely chopped
 
4 large tomatoes, peeled and coarsely chopped, saving all juice
 
1 small clove garlic
 
1 can (4 oz.) pimientos
 
3 cups cold water
 
3 tablespoons red wine vinegar
 
A bout 2 teaspoons salt
 
1 cup fine dry bread crumbs or 1 1/2 cups croutons
 
1/4 cup olive oil
 
2 tablespoons olive oil (optional)
 
1 medium-sized sweet onion, chopped
 
1 medium-sized cucumber, unpeeled and diced
 
2 or 3 large tomatoes, peeled and chopped, saving
 
juice Ice cubes

Directions

Combine in a blender the coarsely chopped sweet onion, the peeled cucumbers, the 4 tomatoes, garlic, and pimientos; whirl until fairly smooth, or grind vegetables through the fine blade of a food chopper.
Blend vegetables with cold water, vinegar, and salt.
You can thicken this soup with bread crumbs.
If you prefer the croutons, heat the 1/4 cup olive oil in the frying pan; add the croutons and stir until toasted.
Reserve for adding to the soup when serving.
In this case, add the 2 tablespoons olive oil to the soup.
Chill soup thoroughly.
