Ingredients

 Snapper fillets-1 1/2-2 pounds
 Bananas-2 -peeled and quartered lengthwise
 Ground pepper1 To taste
 Paprika1/8 Teaspoon
 Butter-3 tablespoons-melted
 Sherry1/4 Cup (16 tbs)
 Lemon juice2 Tablespoon
 Brown sugar2 Tablespoon
 Ginger1/2 Teaspoon, grated
 Almonds-toasted, slivered
 Salt To Taste

Directions

GETTING READY
1. Season the plank
2. Preheat the plank to 350 degrees

MAKING
3. Place the fillets in the preheated oval of the wooden plank
4. Place the bananas around the fillets
5. Sprinkle the fish fillets with the salt, pepper, paprika and the melted butter
6. In a large bowl, mix together the sherry, lemon juice, brown sugar and ginger
7. Tip this mixture over the fish and bananas
8. Sprinkle with the toasted almonds
9. Bake for 30 minutes or till done

SERVING
10. Serve hot immediately.
