Ingredients

 Red potatoes3 Pound
 Olive oil flavored cooking spray
 Green onions1 Cup (16 tbs), chopped
 Parsley1/2 Cup (16 tbs)
 Pimientos1/4 Cup (16 tbs), chopped
 Fat free yogurt1/2 Cup (16 tbs)
 White wine vinegar3 Tablespoon
 Grey Poupon Dijon mustard -1 tablespoon
 Black pepper1/4 Teaspoon
 Red cayenne pepper1/4 Teaspoon
 Tarragon1/4 Teaspoon

Directions

MAKING
1) In a Dutch oven, add potatoes and cover with water.
2) Heat till boiling.
3) Partially cover and allow to simmer for 25 minutes till tender.
4) Drain and cool.
5) In a pan, saute onions till light browned.
6) Without paring the potatoes, cut into 1/4" slices.
7) In a bowl, add yogurt and remaining ingredients and mix well.

SERVING
8) When ready to serve, add the curd dressing to the potatoes and gently toss.
