Ingredients

 24 sweet red peppers, halved and seeded
 Onions7 Medium, halved
 Sugar3 Cup (16 tbs)
 Vinegar3 Cup (16 tbs)
 Salt2 Tablespoon

Directions

Thinly slice peppers and onions, or use coarse blade to grind peppers and onions.
Reserve vegetable juices.
In 4- to 6-quart kettle or Dutch oven combine reserved juices, peppers, onions, sugar, vinegar, and salt.
Bring to boiling.
Reduce heat; simmer 30 minutes.
Pour into hot, clean half-pint jars, leaving 1/2-inch headspace.
Prepare lids according to manufacturer's directions.
Wipe jar rim.
Adjust lid on jar.
Process in boiling water bath 15 minutes (start timing as soon as jars are placed in water).
Makes 10 half-pints.
