Ingredients

 
1 1/2 cups cider vinegar
 
1 cup sugar
 
6 large red peppers, diced
 
3 firm, medium pears, peeled and cut into 1/2 inch pieces
 
1 small red onion, diced 1/3 cup dark seedless raisins
 
1 1/2 teaspoons mustard seeds
 
1 teaspoon salt
 
1/8 teaspoon ground allspice

Directions

In nonreactive 5 quart Dutch oven, heat vinegar and sugar to boiling over high heat; boil 10 minutes.
Add peppers, pears, onion, raisins, mustard seeds, salt, and allspice; heat to boiling.
Reduce heat to medium high and cook, uncovered, stirring occasionally, for 30 minutes or until syrupy.
Cover and refrigerate until chilled, about 4 hours.
