Red Onion Preserves Recipe
Ingredients
| Olive oil | 1/4 Cup (16 tbs) | |
| Garlic | 1 Tablespoon, minced | |
| Ground cumin | 1/2 Teaspoon | |
| Red pepper flakes | 1/2 Teaspoon | |
| Dried oregano | 1 Teaspoon | |
| Bay Leaf | 1 | |
| Balsamic vinegar | 1/4 Cup (16 tbs) | |
| Salt | To Taste | |
| 1 teaspoon coarsely ground black pepper | ||
| 3 pounds red onions, cut in 1/2-inch slices | ||
Directions
Heat oil in saute pan over medium-high heat.
Add garlic and saute 1 minute.
Add remaining ingredients, except onions, and stir.
Add onion, stir, and reduce heat to low.
Cover and cook about 45 minutes to 1 hour until onion is very soft, stirring several times.
Do not allow to burn.
Let cool to room temperature and refrigerate at least 1 day.
To serve, remove bay leaf and let preserves return to room temperature.
