If you have a lot of Beans on hand then you know its time to make some Red Kidney Bean Chili. This is the most comforting Appetizer recipe I have come across. Ingredients

 
2 celery stalks, diced
 
1 green bell pepper, minced
 
1 sweet red pepper, minced
 
2 carrots, minced
 
3 tbsp butter
 
2 potatoes, cooked, diced
 
19 oz canned tomatoes, in their juice
 
2 tbsp tomato paste
 
2 19 oz cans of red kidney beans
 
2 tsp parsley, chopped
 
1 tsp basil, chopped
 
1/2 tsp chili sauce
 
Salt and pepper

Directions

In a saucepan filled with lightly salted boiling water, blanch celery, bell peppers and carrots 2 minutes.
Drain.
In a large skillet, melt butter.
Saute all vegetables, except tomatoes, 4 minutes or so.
Add tomatoes and tomato paste.
Bring to a boil.
Add beans and seasonings.
Simmer 30 minutes.
