Red Flannel Hash Recipe
Red flannel hash is a steak and mixed vegetables hash recipe. Made with ground chuck, the red flannel hash is made with butter to taste. Prepared with potatoes, beets and onions, it is served with a rich butter cream.
Ingredients
3 medium beets, cooked
Pepper
1 large potato, cooked
1/2 cup butter
1 pound chuck steak, ground
1 medium onion, chopped
1 tablespoon cream Salt
Directions
Chop the beets and potato, mix with ground chuck.
Add salt and pepper.
Melt 4 tablespoons of the butter in a large skillet, add the chopped onion, and cook until limp.
Stir in the meat vegetable mixture and cook over a low heat for 10 minutes, stirring occasionally.
Lift mixture into a medium sized baking dish.
Melt remaining butter and combine with cream.
Spoon this over the hash.
Place under a preheated broiler, 3 inches from unit or tip of flame, for 5 minutes or until hash has a rich, brown crust.
May be served with poached eggs on top.
