1 head red cabbage, 3 to 4 pounds
2 tablespoons bacon drippings or butter
1 large onion, sliced
2 tart apples, peeled and sliced
2 tablespoons vinegar
1 cup water
3 tablespoons dry white table wine
1/2 to 1 teaspoon sugar
1 teaspoon salt
Directions
Wash cabbage and discard the outer leaves.
Slice the whole head into thin shreds.
In a large pan, heat the bacon drippings or butter.
Add the cabbage, onion, apples, vinegar, water, and 2 tablespoons of the wine.
Cover and cook over low heat until tender but still slightly crisp, about 30 minutes.
Just before you remove the vegetable from the heat, add the sugar, salt, and the remaining 1 tablespoon wine.
