Ingredients

 6 cups / 450 g / 1 lb red cabbage, finely shredded
 1 1/3 cups / 225 g / 8 oz cooking apples, peeled, cored and sliced
 60 ml / 4 tbsp red wine vinegar
 30 ml / 2 tbsp brown sugar
 A pinch of mixed spice (sweet baking spice)
 Ground black pepper1 To taste
 Salt To Taste

Directions

Mix all the ingredients together in a large dish.
Cover and cook for 15 minutes, stirring twice, until tender but still crunchy.
